Can you ADD black bars on the side of the screen for Ultra Wide?
I have a 3440x1440 monitor but I don't want the game looking so stretched out; and there are some game play hiccups when the screen is stretched as well. Is there a way to "force" the game to display a standard 16:9 image with the black bars on the side? Either in 1440 or 1080?

you don't have to if you'd prefer a proper aspect ratio fullscreen experience, there are plenty of guides to getting 21:9 looking like it should, no distortions, check out lStewieAl's Tweaks and Engine Fixes[www.nexusmods.com]

I've seen some of the solutions to play the game at 21:9 and I can do that, but the game looks bad. Everything looks zoomed in and stretched, is there a fix in Stewies Tweaks for that issue?

In the start menu there is a choice of aspect ratio. My monitor is 21:9. and i have it set at 16:9. It looks good, not stretched out, like it was when i tried 21:9.

I only see 4:3, 16:9 and 16:10 options in the launcher, and I've tried the resolutions at 16:9 but they didn't fix my issue unfortunately.

Thank you so much, you got it figured out for me! I found that I had to set my Mod Organizer 2 specific .ini to the resolution as well, instead of the default .ini. Thank you again.
