How do casino bans work?
If I win 500 caps once a day every day, does it eventually add up to the win limit or do you have to win that much all at once or at least in one day?

When you reach a certain amount of caps won that casinos will outright ban you from playing, ever again. Doesn't matter what pace, or how, if you reach the win limit, you will never be able to play again at that casino. (this isn't a negative thing, it just means you got all the caps possible from that casino and you don't have to worry about it again, getting banned from all of them should be a goal of yours!)

It's only the gambling tables you're banned from, you can still use any of the other options in such buildings.
The Dead Money DLC takes place in a casino that can also be used so long as you reactivate it, just make sure to get banned from it before you leave as you can't come back.
Also after all the years I've played this game I'm only now finding out that Primm's casino will reopen after you brought law back (and you've dealt with the problem after that). Giving another location to play at.

I could be wrong, but I think you can still use the slots after a ban.

no it's a total ban on all gambling, you can still exchange caps/ncr/legion money for chips though, so the casinos can let you convert between those currencies if you need them.

one thing to note is that if you get right up to the edge of the win limit and then win a big jackpot (especially with slots) all in a single action you can easily go thousands of caps over the limit before you get banned. this requires a bit of savescumming even with 10 luck because if you win a smaller prize and hit the limit you will be banned before you can get the big jackpot.

There is a limit under. It says "name of casino" winnings.

If you want to go over it mods or when you are close to the limit play slots or roulette. Lose intentionally and repeat trying to win jackpot or 35:1 payout.

I’ve been dabbling in online casinos for a while now. From what I’ve seen, most places, including winomania casino[mycasinoreviewer.com], track your wins per session or day rather than adding up over time. So, if you're winning 500 caps daily, I don’t think it would hit any ban threshold unless there’s a rule about cumulative wins (which I haven’t come across). It’s usually about the big jackpots or hitting the daily limit. Just my two cents, but definitely check the terms of wherever you’re playing.

With high luck and blackjack it's more than possible to get kicked out of a casino in less than a day.
More so at the Vikki and Vance and Atomic Wrangler as they have far lower ban caps.
