Idk wtf "Dan's casino" is but it sounds like a mod so you would have no way of knowing what's safe without using the geck or fnvedit.
In that case, helping Novac will eventually get you a key to a permanent room (I think the fridge is unsafe if I remember)
Helping Freeside will get you a permanent room in the Silver Rush
You get a free room once you get to the strip regardless of what choices and factions you choose to side with.
Helping NCR or Legion will eventually give you access to safe houses but I've never used them.
I believe there are other player houses that can be obtained but I've never gone for them. The above are ones you will likely accrue just from playing through the quests.
As for an optimal home, Victor's shack has great decoration and good lighting, so is ideal for turning into a dollhouse. There's a workbench and reloading bench across the street from it, and fresh water and a fireplace right next to the fast travel spot in goodsprings source where you kill the geckos during the tutorial, plus many useful plants grow in the area.
If you need more space, or containers to sort your stuff, Harper's shack is the best place you'll find. Dedicated fast travel spot, campfire outside, reloading bench and workbench inside, multiple containers to keep your loot organized, many tables and other surfaces for displaying weapons, and enough real estate to turn power armor equipped corpses into improvised armor stands. Unlike Victor's shack, it's extremely unlikely that you'll fill Harper's shack to the point item physics ruin your dollhouse.
Pros: both the NCR and the legion patrol the road outside, and are frequently attacked by the big pack of respawning raiders. This means you'll always have a fresh supply of trash weapons and armor to repair your good stuff, and a steady stream of both kinds of water.
Cons: occasionally a lot of deathclaws spawn nearby, and if they see you sneak inside, they'll follow you, which can jeopardize the dollhouse. Lighting inside Harper's shack is also abysmal.

Harper's Shack was my go-to storehouse once I came upon it so many years ago.
It's smart to use sneak mode outside the shack to get an indication if the deathclaws have taken notice of you. If the sneak indicator says caution use a stealth boy.
