That being said I highly recommend you pick these mods up as well as DUST to avoid like... 70% of issues (and as a fair warning custom races might break the DUST intro)

If you're looking for quests/content, New Vegas Bounties (I recommend the LE versions) and AWOP will add a good amount, along with NV Interiors.
If you're looking to make gameplay more brutal along with this, the classic trio of BLEED/ROOG/Sawyerbatty will definitely get you fairly close.
I play vanilla nowadays but I’ve installed/uninstalled DUST twice in the past without issue. Does it take a minute to do? Yeah sure, but that’s kinda typical with mods like this imo
Modding always carries a risk of deleting important files in your install, DUST is not unique in that regard.
That's not the issue - if you use a proper mod manager, you're never touching the files. It's literally impossible to damage your vanilla files (or other mod files) using MO2 or even Vortex.
The problem with deleting vanilla records via plugin is that it *will* cause crashes and *always* has the potential to corrupt your save at any point the game might refer to them.
There's no risk to your game or your computer - as was said, you can always just reinstall in the worst case. I just can't imagine getting too invested in a game that is guaranteed to crash/break at some point on a long enough timeline.
