Why do people love the NCR yet hate the Enclave?

They both have the same goal of uniting America and NCR even admires prewar America. Other than the NCR being more corrupt and most of the Enclave leadership wanting to kill all mutants. There is practically no difference.

Mostly because the current Enclave variants we've gotten have all ended up mustache twirlers, or were killed by a homicidal robot when they revolted against their insane mustache twirling leader.

I've said it before Autumn could have won by default if he didn't show up shooting people at Project Purity and then worked with the PC to shut down Eden. Plus Autumn had a very confusing message where he was opposed to using FEV to wipe out wastelanders yet still sent around Enclave troops to manually murder them.

the enclave was basically a fascist dictatorship with goals of purifying the wasteland of anyone who isnt them.

the NCR are just a corrupt/ poorly managed political power in the wasteland that are trying to bring some resemblance of a functioning society back to a place that cant really have that

First, the enclave are democratic and not fascists. Second, when I said mutants I was also talking about the ghouls and radiated humans not just the mutants.

Fallout 3 and 4 aren't fallout games, and their version of the universe doesn't matter.
