In FONV, you want to have ED-E, if you are on lasers and have finished the Lonesome Road due to the damage increase this provides. Other than that, they are only useful as carriers and for repairs.
In FO4, you keep them until you get the afinity based perks or the quests they have to offer and you can dump them. And you definitely should if you are the sneaky type. I never travel with Strong or Curie though.
Companions matter much more in FO1 and FO2. To me, that is...

I think what he was saying was that companions in 3 act more like pack brahmin for the player character rather than actual characters like in NV or 4. Which I can totally understand since other than maybe Fawkes none of the companions have any sort of character depth.
Fallout 4 has the issue where REGARDLESS of if you hate the companion you should get max affinity just to get their perk you're essentially missing out if you choose not to.
In New Vegas if you don't care the perk the companion gets at the end of the quest doesn't affect you it's a buff for them so you aren't punished really for missing out.
Lily, Gannon, & Veronica are wonderful additions to have early on and/or for non combat focused characters. Boone is great for sniper characters, Cass is good if your character drinks tons of booze
Rex is a good boy
I don’t always use companions, but more often then not it’s great to have them (only exceptions really being cazadors and deathclaws, but even then you could just have them wait a safe distance away)
