I've played almost 200 hours completely vanilla and haven't really been bothered. I've had a significant but manageable number of crashes (generally when walking large distances across the map during a long play session), and I've experienced no major bugs whatsoever (just things like the occasional enemy spawning inside terrain), but ymmv.
Never use auto save.
Never save over an existing save
If there’s too many dead bodies just rest for 3 days to clear out the bodies
Add to this NVTF and NVHR, as well as JIP LN and Johnny Guitar - although the last two are *mostly* just extenders, both do also fix vanilla bugs and crashes.. To be honest, lStewieAl's Tweaks should also always be loaded with the vanilla bugfixes enabled, even if you don't use anything else in it.
Whilst there are workaround, its way better to just install stability mods.
Here are some that i use, which result in almost bug free as well as no crash (except if you play for long hours, usually more than 3 hours and the game would start working slowly. Just type in "pcb" in console command (press ~ button), or restart the game.
1. NVAC (New Vegas Anti Crash)
2. OneTweak for FNV
3. NVTF (New Vegas Tick Fix) <- There is another variation of this, but this one is for windows 10 afaik.
4. YUP (Yukichigai Unofficial Patch)
5. NVSE (you gonna need this if you want to mod later on, also for some bug fixing mod)
6. Audio distortion remover (requires NVSE) <- this thing remove audio distortion that create crackling in Companion when they use helmet. And especially when Elijah talking in dead money, which is very unpleasant to hear. Sometimes you dont need this, but just install it anyway so your ears dont bleed if you have these problem.
7. New vegas 4gb patch (more ram, game works better and less likely crash)
8. Reload animation fix - Lever - Pump - Single action guns (well, its a bug that occur in 3rd person for certain type of guns)
9. Grunt perk fix - complete (so it actually affect even the GRA type)
10. Lonesome road True Faction Allegiance (Its not really a bug, just changing Ulysses speech based on your quest progression rather than reputation. In Lonesome road DLC.
Though story wise, it make more sense for it tied to your reputation due Ulysses is just a man holed up in nowhere, so he cant really update information accurately. But its more than likely wont match with which faction you truly are following)
Those mod are what i use in making the game more stable. Its very good in making your game bug free and crash free, as well as changing some thing a bit to make it working more properly. Here are some modifying mod which make things a bit more convenient and no alter to story / gameplay whatsoever:
1. Inventory search (adding search bar in your pipboy as well as while selling stuff in vendor)
2. Ulysses' mask fix (So its actually classified as a mask than headgear, make more sense for me)
3. Casino Anti Anti cheat (You dont need to wait long if you quick load after losing some gambling)
Some mod that alter the gameplay, and definitely change the feels of the game, but to make it more closer to modern game:
1. Just Vanilla Sprint (This is the most simple out of all sprint mod and compatible with lots of mod)
2. Just Hit Marker
3. Just Dynamic Crosshair
4. NPC's can sprint in combat (Highly recommend this if you use Sprint mod, so that it doesnt make the game inbalance when you can run. Now NPC in combat can chase you too, making melee based enemy pretty scary as they can run towards you and close in distance fast)
There are also mods that restore cutted game content, which i would recommend when you feeling like wanting to replay the game (i highly recommend it, due to many choice you can have in side quest. As well as the game recognize and adapting to your action. Maybe try it for 2nd time or 3rd time).
Well, goodluck modding. Also, if you later on planning to have lots of mod, use Mod Organizer 2. For me its the easiest one to use.
Playing vanilla - only about 15 hours in (restart) - I've had the distance crash once and one time an NPC was half way up a wall for some reason but otherwise no problems.
Don't know what ymmv stands for but I'm guessing it's similar to "you pay your money and you take your chance".

'Your mileage may vary'. I'm usually terrible at internet abbreviations/acronyms/initialisms, but I know this one.
Thanks BHB.
