At least eventually, feel free to make as much use of the .357 while you can until the time comes that you just have to stick it on a shelf (I do this with so many of my old weapons in these sorts of games) and let it remind you of the good old days before you had to give up and get a better gun.
There's a lot of really big things out there in the wasteland, and sooner or later you're gon'a need a bigger bullet.
Not that the smaller ones can't also kill those thing, it just takes far more of them
The .357, the .44 and the Hunting Revolvers, which use the .45-70.
While the Hunting Revolvers, and their "legendary" variant the Ranger Sequoia have the highest damage output, they're limited to 5 bullets per load.
Also, that ammo is less plentiful and has less useful variants.
The .357 has the most plentiful ammo, but it's lower damage, while the Lucky variant has a significant bonus to critical chance and damage, it's early game equipment.
The .44 has a decent damage output and the Mysterious Magnum does significant damage, but the greatest advantage lies in making SWC rounds in a reloading bench.
Not only do they do more damage, but they ignore a fair amount of DT and do not deteriorate your gun faster than normal.
To be fair, the .357 has the JFP which also does more damage and flies straighter, but it ignores less DT and does less damage because of the types of weapons that use them.
Of course, if you're gonna be a cowboy, you'll probably need a Cowboy Repeater, and that also uses .357 so it would make it easier to just carry one kind of ammo, but then again, unless you're playing in Hardcore, ammo has no weight so carrying the two kinds of ammo shouldn't be a problem.
Personally, I like the .44 better, it's the gun that won the West, but yeah, those are my thoughts.

Add to that the Hand Loader ammo like .357 JFP for 25% extra damage, -3 DT and better spread with no penalties whatsoever, and an early-game weapon like Lucky actually stays surprisingly relevant.
Don't forget about That Gun either. It may be a bit futuristic but it's affected by the Cowboy perk and is very effective.
The ultimate cowboy weapons are the Ranger Sequoia and the Medicine Stick. The expensive ammo is definitely worth it.
The .44 revolvers are alright, but they have a low crit multiplier and far from the raw damage of the Ranger Sequoia.
the .44 arent really decent they just arent accurate or something, and really low durability.
ranger sequioa is decent but you probably should secure a source of ammo for it.
that gun is decent.
brush gun/medicine stick counts as a cowboy weapon and is pretty decent but again the 40-70 gov't rounds.
I use the Trail carbine instead of the .44 magnum. the magnum I don't care for.
and I suppose you could rob an old man for his carbine for the other option.
Mid-game I switch to a combo of the Mysterious Magnum and hunting revolver. You can get a hunting revolver early from the REPCONN Test Site, but ammo is rare early game. With the two pistols I use the Magnum for fast shooting action when there are a lot of enemies, and the hunting for power. Plus you have diversified ammo.
Late game the Sequoia is the go. Only 5 bullets, but if you spec well those five bullets will lay waste to everyone and everything.
Quick tip - if in a big fight with lots of enemies try to fire all but one bullet and swap guns before the reload animation kicks in. The draw back with revolvers is the small number of rounds and watching the reload animation over and over again during a fight sucks. If you manage to stock-pile a few sequoias you can equip them all (grab the jury rigging perk). I cleaned out the quarry with a sequoia, and old cowboy hat and the sheriff's duster.
And yep - you'll need a rifle or two for some range. Brush gun and/or trail carbine are great and you can get a scope for the carbine if ya wanna snipe. But the real authentic cowboy sniper rifle is the la longue carabine. This baby can be acquired from Corporal Sterling. You can murder the poor guy, or steal his ammo and then the gun.
