So, we got the main boye, Six. THE Courier. Is there any other mentioned or detailed couriers? Ulysses is a courier, likely Seven, but who else (If at all) are mentioned or otherwise known?

Second, what were the Courier's packages? I know we had to deliver the platinum chip, but what else had to be delivered? I remember some manifest or something teling what else was required... Was it just the platinum chip?

The only other courier besides the player character and ulysses was the dead one in front of the mojave express in primm.

The courier packages were stuff like dice that were just decoys for the platinum chip. The dead courier in primm has manifest for a pair of oversized fluffy dice so one could think that the other decoys were stuff related to gambling, like a deck of cards or coins or something.

IIRC, I think there is the full itinerary of what each courier was carrying somewhere in the game - is it at the Mojave Express itself?

There are only two Mojave Express Delivery Orders in the game.
Courier 4: Two (2) Oversized Dice, composed of fuzzy material
Courier 6: One (1) Oversized Poker Chip, composed of Platinum

Johnson Nash is the only source of information about what the other packages were.

"That cowboy robot had us hire six couriers. Each was carrying something a little different. A pair of dice, a chess piece, that kind of stuff."
"Last word I had from the office, it looked like payment had been received for the other five jobs. Guess it was just your chip that didn't make it."
"First deadbeat we hired to do the job canceled. Hope a storm from the Divide skins him alive. Well, that's where you came in."

He also has a second dialogue response, which as far as I can tell isn't used. I'd guess there was supposed to be a conditional check on it or something.

"To start with, it was a robot that set it up! Came rolling in with a picture of a cowboy on a screen where its face should be."
"Had me send a request to the Express office in Hub, for seven couriers to be hired. Each one to carry bric-a-brac, seemed to me!"
"Playing cards, dice, chess pieces, trinkets like that. Then, next thing I know, he turns around and says he wants six couriers, not seven!"
"Has me send on the "corrected" order for six couriers along with a bunch of letters and numbers, like some kind of code or something!"
"Don't ask me what that was about, because I never seen anything like it. Anyways, you must've been Courier 6, then? The Poker Chip?"

Alright... So just casual gamepieces and whatnot.

Playing cards and chess pieces are the only other trinkets that are confirmed at this point.
