and i came to NV because i couldn't stand Fallout 4, or 3 for that matter, or anything made by Bethesda in house devs...i just cannot get into it, I need some substance, and i heard this was the one to play for that. also, obsidian.

i have the goty edition, i think, because i have all of the DLC's, they are just not activated in the Data Files, but i''ll get on that now.
Gun runners arsenal is an exception as it adds lots of weapons to the merchants inventories, but that should not influence your experience.
Couriers stash is another exception -it gives you a bunch of items at the start of the game (making the game easier) - you can just stash them away in some random box if you dont want them.
I always disable the Courier stash, I don't need a bunch of extra items to start out with... :\
i recommend all DLCs activated, plus get some mods. At least YUP for some bugfixes, maybe unofficial patch plus for some more fixes (altough it currently breaks ghouls, so you will also need GhoulRadTweaks,too), anti crash won't hurt either. I also like the goodsprings home, altough thats just if you want an early house for yourself with all the extras to craft stuff and lotsa labeled storage.
The game creates a separate autosave before the finale (and it clearly tells you that this is the point of no return) - so you can always go back and play the dlcs, wrap up quests, do whatever you want.
I must say I don't play the main quest, so dlc are the most important part of the game. Without them the game grows quickly boring because there is no real freeplay.
But on your first play you can try without them.
Better start a new game. Or play fallout 3.
Here, due to the way the story was written there is no possible post quest game.
