I do not totally agree with that. They can be done again, IF people wanted to do it or people wanted to listen to it. If you wanted that same exact sound, they would also have to do it on the old platforms or at least synthesize it. I will post some examples, maybe you will agree in part or not at all.
Perry Como did a cover of a song, most of you know it from The Fugees, called Killing Me Softly. This was probably before any of The Fugees were a glimmer in their daddy's eyes as it was back in the early 70's. Some think it was Frank Sinatra and it does sound like him in parts, but it is in fact Perry.

Postmodern Jukebox got that old world feeling to it for sure. They redo a lot of the newer ones to fit the tone, complete with instruments and outfits.

Idk it must also relate to the equipment used to record said music. Think about it. good example are the songs before the senstive mics were first invented (that lead to croonners or however theyre spelled) they needed to play loud enough and scream or talk loud enough for the mics to pick up on the sound.
Plus they lack the raw i guess passion that could only really be captured at the time. Sorta like listening to a regular sound track, the live concert version, and actually being there in person to hear the concert. It's the same song but the experience is 100% different in all cases. No amount of current audio recording technology can really capture the moment.
Recording equipment as well as records or what ever they were initially called, made it sound a certain way as well. Here is a live version of the Seven Nation Army by the same retro band. Maybe it suits you better.
