My thoughts so far:
(siege) onagers are bad choice as they typically just do 1 hit before dying and the trade is bad.
Paladins seems to be ok, elephants also, depending on what else the AI throws. I'm liking these bad bois lol
as for trebuchets, I think the best are really ♥♥♥♥/huns, right? [idk what warwolf does]
Also, mangudai have a bonus vs siege weapons :)

Heavy cavalry usually works fine. Magyar huszárs are… not really, despite their speed and damage bonus, they do not last long enough to get near the scorpions, when there is a large enough pack of them.
2-3 siege onagers do wonders, if you manually aim them.
Against the AI, you can send some rams to soak up the scorpion fire as well, rams always attract high aggression.
