First off I should mention I preordered this game 2 years ago and found the game fun at launch and my opinion of the game didnt change even though the game was missing features. Now that most of these features have been implemented I can now give my full opinion of the game.
No mans sky isnt really meant to be focused around fun but instead seen as an experience of endless exploration. With this in mind my experience was amazing, with every system giving you the chance of finding 'that' ideal planet. The whole galaxy lays host to millions of different planets with different plants and scenery that could make this whole game just a screenshot simulator. Each ship you own giving you a sense of ownership and personalisation. You control how you want to play the game.
Overall I would give the game a 9/10 (In my opinion) you have to take into account that everyone has a different experience and that experience is better with friends.

UPDATE!!!!
After playing some hours of the new update I definitely recommend this game to VR users. I was super excited to be able to play this game on my Valve Index and I was not disappointed. There were some performance issues in the new hub but it didnt effect my experience of being able to meet and communicate with people with my hands. The ship experience is super fun and being fully immersive is a plus also.
