Having "any horse" in inventory mitigate speed penalty that occur from trading goods (only!). So if you are trading there and there it is good Idea having few extra horses(any type) in inventory (as general rule I am having about 5-6). if you never trade it is waste of item slots and just keep 1 reserve horse for yourself as horses do not add any speed bonus (only ratio of mounted troops affect speed - hence you and your companions mounted and mitigate the penalty for trade goods)
As for mules specifically they increase inventory management skill = hence indeed adding 6 exxtra slots to inventory. This bonus can be get just once, so multiple mules do nothing extra (beside help mitigate speed penalty as explained above)
