Stellaris - How To Access Previous Builds
Tip
https://forum.paradoxplaza.com/forum/index.php?threads/changes-to-playing-previous-versions-of-pds-titles.1120883/
Due to the way the GDPR works in order to access 'historical' builds in various games, you will need to link your Steam account to Paradox. The basic just of it is, older versions of Stellaris don't force you to see the new GDPR compliant privacy policy. This means, in theory, someone buy the game, go to a previous version, launch it, then report PDX for GDPR violations
If you are currently or wish to, play a previous version of Stellaris, you will need to link your Steam account to Paradox as per the thread above.
To find the BETA codes you'll need to unlock previous versions
https://accounts.paradoxplaza.com/games
SCROLL DOWN and find the "Access earlier versions" and click "SHOW". Then you will see codes for the different games. Just input these codes in the BETAS tab in steam. Once you do these older versions will now appear.
Note these codes will be unnecessary to access FUTURE patches, as these patches will be GDPR compliant.

This... Steam lets you do it via it's options easily via Betas...
