Normal square one at the top (make it square, not trapeziod), and possibly fit in a wide LCD a bit lower? Those fixed blue screens ain't important.

I don't think you should overengineer them. Just stick to the same formula - anything more is excessive.

You can, I think, should write to developers about wrong UV Mapping on this cocpit. It's easy to fix in 3ds Max. Also I can do this, but it need to implement into game in update.

have you looked at doing something like the Azimuth fighter cockpit layout? That has a fake 3 screen layout that is perfect for your mod.

I've just been using the Lancaster mod - bit annoying cos it blocks the small convayor port at the front of the cockpit.

But one thing I found which I thought you might find useful - the 2 LCDs at the bottom, it's really worth making it one wide one. Otherwise it's just not worth having, most stuff is too small. For example the ammo list is either too small to read, or goes off screen.

So...at the top a square one, at the bottom a wide one.
