So as much as it hurts - Skill issue, I got no problems and win the war immediately every time
If you like to I can show you some proper templates but it comes down to only using tank/mechanized/SPG and air-superiority only then later CAS when you got the industry.
Pure air superiority plane can shred the AI its insane but you wont have the numbers until the 2nd EAW.
Winning as Russia is far, FARRRR harder so dont say NATO would be bad.
About your complaints:

-> You are not dependant on your allies. YOU are the hammer, not them.
-> Let the AI cover the front while your heavy divisions break through and encircle
I win the EAW within a year as Europe, usually under 6 months even.
Did not played as France yet due to bugs but I assume it shouldn't be alot different.
So look at it from a different approach, you are not supposed to cover the border. Let the AI cover the borders and fight it out while your heavy breakthrough units support and encircle. Russian AI is also not the smartest in securing their flanks when they push.
There is absolutely nothing complex about the mod or the designers, especially not for the tanks and planes its very, very simple. Even more simple than vanilla cause its far more straight forward about whats good and what you can add.
Bonus hint:
You can change two political laws early to get 0.20PP which is neat. One of them is border policy and the other is inclusion or something like that. Focus on that early and you benefit from more PP all game while the downsides dont matter at all.
On planes you just add AA missiles only, engine, 1 component about take-off that gives most agility with no downsides then spamm the radar component that gives air defense and you can shred AI
You do the same for CAS later but with ground missile - was that so complex?
