The best way to defeat them is generally to out missile them. On an open battle field, ideally have an extra AI controlled army with mostly missile troops, (which default to skirmish mode), and some spearmen in case they charge these missile troops.
true the horse archers in vanilla are already pretty good and have a lower unit count, which is why in this mod not only they overpower most other units even 1:1 but the overall archer/slinger units cannot even counter them unless you bring another whole army of missiles plus spearmen.
the only true counter are probably the parthian archer/spearmen hybrid but even they suffer horrifically while still costing much more.
the solution i see would be to bring missile units to at least to a 100 man size, (maybe even 120 if they're crap peasant slingers).
also possibly slow down the horse archers a little so light cavalry can catch them because as it is they just melt during the chase.
