probably because it's a rather large mod which adds in two completely new continents full of countries (many of whom have focus trees) and without a wiki you would probably get lost and have no idea what you're doing lol
Griffons, Minotaurs and most other races with fingers or claws can operate guns the same way humans can. As for the quadrupeds...

Saddle-mounted rifles and heavy weapons, lighter guns (like pistols) with handles designed to be held with the mouth, marksman rifles designed to be stabilised onto cover with triggers big enough to be pulled back with hooves, overall bigger buttons and levers on all kinds of weaponry.. Equestrian war instruments would look pretty alien compared to ours. If worst comes to pass, ponies sometimes have some sort of way to hold onto things with hooves; so they could momentarily rise to a bipedal stance and shoot, though fine manipulation is impossible with them so it'd be hard to use a gun like that.

Trust me, our fandom's had a LOT of time to think about this.

Also the pistol in a mouth thing. Wouldn't the recoil ♥♥♥♥♥♥♥ break their jaws? I don't get that one.
And the bigger button lever things would make more sense, I would imagine that, but just perusing the images of this mod showed no implementation or suggestion that that existed- just normal human stuff slapped on horses.

I think what it comes down to is suspension of disbelief, really. The Reason for why the "Canon" explanation for this issue sounds whacky and problematic is because... it is.

It's a lovely mod made by a dedicated team of developers from all across the world. There's a lot of effort put into it. At some point we all just kinda forgot about the minor details to appreciate the mod.

Oh yeah listen this mod is great.
I'm pretty against my little pony, not a brony or any of that. The only reason I have respect for this is because the fact it is actually excessively well built and really well done, that even a non-fandomer can admire it.
Also yeah it is hard to flatten this all out, heh. Thanks for pointing that out.

What would probably work better is a button instead of a pulled trigger. By keeping it on the side, they could strap it on, possibly even tie it to the forelimb, and then it's a push instead of something they would need to pull
