Also you could make "dummy" ships, like dummy tanks from WWII that were inflated dummmies. They could be a ship with no insides just a hull.

I'm sure some of your suggestions will be build at some point, we're going to make a very expansive fleet! From "rowboats" to large carriers and everything in between.

You should make a blockade runner cargo ship or even a scavenging ship to find escape pod evacuees and grind up ships at the end of battle that are beyond repair.
