WÜRM - Mining Ship. (stock, o2, survival, updated March '15)

A reasonably sized large mining ship for survival. Small enough to actually be built by a sane person, large enough to haul a huge amount of ore.
This ship is long and skinny so that it can bore a tunnel all the way through an asteroid. There's enough cargo space that you can do several passes before having to unload at the base. It's a bit of a slowpoke, definitely feels like mining equipment.

-Gravity gens to manage mining debris
-Automatic Stone ejection
-1 refinery and 5 furnaces to help get a head start on that ore. And avoid running out of uranium.

I have one of the forward thrusters set to a low power override, just kick that on while drilling and go grab a beer.
