To start
Get into wheelhouse
Simply flip the ignition switch and you're good to go

To stop
Turn off the ignition switch

To sink
Seren is quite a durable ship thanks to the hydrofoils, so a 'natural' sink is not plausible.
There is a button in the engine room on the right of the breaker panel
Press it and she'll slowly go down stern first

Notes
When hydrofoils are raised, she is very sluggish to turn - if you need to turn fast, drop back into the water
In windspeeds over 10, the hydrofoils can get unstable, use at your own risk
