What will you do when your favorite new releases force ray tracing that can't be disabled?

Unfortunately the choice is not yours to make as a consumer. There is no decision about if the end user wants it or not. Raytracing is the new graphical standard like DirectX 10, 11, or 12. Soon most new games will start requiring it to play the game and then at some point all games will require it.

Today there are a few games that require raytracing and most have it as optional but in the future gaming will change to all games requiring raytracing to run them.

Already today all video cards sold in the past 2 years support raytracing from Nvidia, Intel, and AMD. By the time all games start requiring raytracing the hardware will be fast enough where the performance hit to use raytracing will be negligible or not even measurable.
Exactly! Until Indiana jones we could choose if we want ray tracing ro not. And now we still can disable it in most games. But form now on they will release more and more games where there will be no option in the settings to disable ray tracing. It has not do about what we want and what we dont. While now there are only 2 games who work only with ray tracing cards there will be more and more until all games will need card with ray tracing.
Also as this article says here https://www.pcgamer.com/hardware/doom-the-dark-ages-pc-performance-analysis-always-on-ray-tracing-isnt-a-problem-and-even-a-cheap-gaming-laptop-copes-just-fine/ if the optimization is good then ray tracing is not a problem.
