They'll have a badge for it, and on the forums their name is in orange with a gold star to tell them apart from regular members.
No. There is no such thing as middleman trading or Steam Admins assisting in a trade. Any such demand/request is a scam.
Keep all trades with in the trade system and the chances of you getting scammed are almost 0. If you do not trade for a Steam Gift, then the chances are 0.
Admins would be Valve employees and thus have a green name, a Valve-logo next to their name and a Valve Employee badge proudly presented on their profile. ... And they don't meddle in user-to-user affairs. Never.
Follow Spawn of Totoro's advice and you should be fine. Trust nobody and if you're not sure, ask here firstly as you already have done.
I'd like to add that the proper procedure when confronted with someone who tries to claim to be an admin or asks you to involve an admin in the trade is to do the following:
1: Block them because they aren't an admin, aren't looking to trade, and are only trying to scam you.
2: Save all the chat logs you can.
3: Go to their profile and find the "report user" button.
4: Include all the logs and all other information you have in the report, and send it off to Valve since they happen to be the real admins and generally don't like it when people impersonate them.
Anything you do beyond that (e.g. calling them out as an obvious scammer, wasting their time by stringing them along, ect.) is done at your own discretion, but will also likely be a waste of your time as well.
