I take it you've tried Ark Survival Evolved? It's enjoyable but quite clunky. It makes up for it in what it is though.
Also, I recommend Raft too. It's a bit slower especailly at the start, but a very enjoyable game too.
Mist is quite nice too. Not played a lot of it yet, but I've enjoyed what I've played thus far.
I would caution against the Forest though. Again a great little story and on paper a good game, but the combat is complete crap. It just feels really off coupled with the AI movement. It can be really unfair especially if you're in for a more laid back experience. It does, however, have a peaceful mode with the ebnemies removed but that really spoils it.

Also, I suggest trying "The Forest" out.
The Long Dark ? or Subnautica series?
I absolutely echo The Long Dark.
It's differnt to the likes of 7DTD and their ilk, as it's got a really neat backbone of a story (or alternatively you can play a more sandbox mode without the story).
It has a great art style, the atmosphere and sound is amazing and the gameplay utterly works well for a hostile icy environment.
I cannot recommend it enough.
