Also one thing i just thought of, how do i play Dawnguard, Hearthfire, Dragonborn, do i just do a quest to start them or do they start seperately?

to start with, I'm not sure about how installing the steam version over a non steam version will effect your save files. But I can say that I'm in the same situation of having skyrim, and upgrading to the legendary edition. When I installed the DLC, I opened my save and it treated it like I always had the DLC.
I.E. the opening mission to dawnguard I picked up from a guard mentioning the reformation of the dawnguard. I purchased a plot of land to take advantage of hearthfire, etc.
