Really depends on what you are looking for. ESO, FF14, and SWTOR have great stories. WoW in mythic+ and heroic (and mythic) raiding are mechanically more challenging than most single player games (although a big part of the challenge is coordination between players). Warframe (if you want to ♥♥♥♥ it as MMO) has probably one the best traversal mechanics of all time. Runescape is an absolute horror for completionists and will keep you occupied for a long long time. GW2 and DAOC have great PvP experiences (WvW/RvRvR).
And finally there is EVE. If you call that dulled down, you probably play Hearts of Iron and the like on a toilet break. :P

Anyways I would say try out Elder scrolls online maybe, or maybe Star Wars: The Old Republic. Guild Wars 2, or Black Desert Online, not sure if they float your boat.
There's a few on the horizon but they are mostly a shadow of a dream, if you never played
Ultima Online, give it a shot, its still one of the best MMO's ever made, or you could be able to get something from runescape or albion online.
