Because Bites aren't Strikes.
The consistency downgrade you pay for this is the sole reason why I often decline even if my HP is low enough to lose none of it at the time, unless it's really low and I'm really desperate, but man does it suck to have 5 bites against hyperbeam man.
For reliable Block builds which need some turns to kick in (Frost focus or Barricade with 1-2 Entrench+), it's better to have more bites IMHO.
For me it's more like "If I want the Bites, I want more than 2" - but I hardly choose them anyway. Another minor, yet interesting thing to do with more Bites is transforming them since they become colorless cards. Yay
EDIT: To clarify my point: If you already were on a good road to remove your Strikes (2 or so left) - I doubt that paying 30% of max HP would be a good deal - not for 5 Bites, and also not for 2.
I remmeber having a poison deck, and I only had 3 energy - but in act 2 I had a chance to buy Art of War. As for attacks I only had 2 Strikes and 1 Neutralize left. Soon, I managed to remove the 2 Strikes, so thatks to that I had Art of War as my 4th energy relic - I wouldn't have even taken 1 bite here ^^
But yeah, I took those "take 5" as too granted - now I remember myself thinking "man, I just removed 2 strikes - fk that, NO DEAL NOSFERATU.
So yeah, I can now feel that frustration - whenever I agreed I had only 0 or 1 Strike removed.
