so i have gog version but it might be the same for gog
all the games i had up to now
when you click on show file location on the default shortcut it always shows the game's exe file
but on this game for the first time it links to javaw.exe
the game does have its normal exe so i wanna know what this javaw.exe is
i wanna know which one to use
i know both probably will be fine but i wanna know the difference

When the game's running, task manager shows that javaw.exe manages its child process SlayTheSpire.exe. Java is the programming language they ostensibly used to code this game. You can launch the STS executable directly too but steam tends to view this as unintended and send an error report.

In short, trust the generated shortcut. Pretty sure minecraft runs a java process alongside it too. It even installs java the traditional way instead of shipping with a standalone version tailored to it, or at least it used to.
