The Giant Stone Head is too hard
For the love of god make this guy weaker, he has wrecked me twice now. ;) Is there a trick to beating him? It seems like expecting people to do 100 damage a turn is a bit difficult for that point in the game.

Cards that scale your damage. Demon form or inflame+limit break. Barricate+Body slam. Good shiv deck. Poison+catalyst. Defect had usually insane deck at this point of game.

Just remember that more cards you play and more damage you will do, so try to use your strongest hit as last card of the turn.

The idea is that since the Giant Head doesn't really dish out much damage during his countdown, you can spend that time easily prepping your build. In my opinion, he's actually the easiest of the elites in Act III, because much of the time you can finish that fight without ever taking damage.

For those who aren't specced to block, if at that point in act 3 your build can't dish out 500 some damage during a pretty much free 5 turns, then your build has a major issue. As for those who go for a slow/blocking playstyle, that tends to be even easier since it gives you ample time to gain focus/dexterity/barricade/etc.

In addition to some of the builds mentioned by SpearOfLies, you could try some of these:

Ironclad:
Demon Form or Inflame/Flex with Limit Break + Heavy Blade/Sword Boomerang
Barricade/Entrench/Bodyslam/Various Block Generating Cards

Silent:
Bouncing Flask + Catalyst will work wonders (especially with an upgraded Burst, you'll two-turn this guy then).
Stacking Footwork and Blur then slowly whittling him down using Noxious Fumes/Other Poison also works (I've done this quite a few times recently since my decks have worked out that way most of the time)
Shiv Deck? I don't really know how to play the shiv deck that well so not sure as to that one.

Defect:
Echo form + everything
Stack focus with Defragment + Consume and then proceed to either stack frost/lightning/darkness and just straight nuke him or slowly whittle him to death while having a billion block.
Also seen things with Hologram + All For One + Claw(s) + Some sort of energy gain such as Double Energy/Turbo

@blood flowers They usually had cards or relics that scale with how many cards you played. With giant head slow status, they can do a lot of damage by simply playing a lot of cards in the right order. Blade dance alone raise the slow by 40% while doing a decent amount of damage.
