How to beat Time Eater?
I've gotten the Time Eater as a 3rd level boss 5 times in a row now, and I don't know how to beat him. I never find the correct cards to do 1-2 move heavy hitters, and instead end up doing like 6 moves a turn.

I would prepare ahead of time, but you can never tell what the third level boss is gonna be from the previous levels, which is actually quite annoying. I tried saving proper potions to go against the time eater, but theres a 12 move limit before he ends up doing massive damage. Hes by far the much harder of the other 2 level 3 bosses I've seen, and he does a lot of damage at once, too.

Is there any tips or tricks I can use against the Time Eater or is he the screw of all screws for almost everyone in the game?

3 Dex Potions can make him quite a bit easier. Sounds like your strategy is fine-- you typically want to keep around 6 cards a turn, so it just comes down to your deck build. He also doesn't punish slower decks near as much as Donu+Deca or power-decks like the Woke Bloke. Any archetype can beat time eater-- even a spammy shiv deck, they just need the right balance of defense and offense (or the ability to kill him in a few turns).

Ah, well, I use the Ironclad. And its difficult getting my hands on Dex-potions. I'm very unlucky at this game that I'm glad I even make it to level 3.

I also usually don't know what cards to dump first, seeing as the usual decks I go with are more heavy-hitting based instead of defense. (It's hard to do both without just getting an entire 'block' hand when the boss plans a debuff/buff)

Look at your win condition and work towards it.

Ironclad:
If it's rampage, don't waste your time chipping away at him with other negligible attacks.
If it's any form of strength ramp, focus on playing the cards that benefit the most from it.
If it's barricade, maximize body slam damage with vulnerable if you can't outblock him for an otk.

Silent:
If it's poison, one-shot him with catalyst or stack blur as quasi barricade. Weaken if necessary.
If it's shiv, carefully plan how many shivs you produce or they might end up in your discard pile.
If it's discard, try to work with what you have instead of pointlessly going infinite.

Playing 6 cards a turn isn't even bad, by the way, but only with purpose. Usually this involves cycling to your best cards. The more of those you play, the higher your winrate.

There's also an exploit to keep in mind. If you play burst, the duplicated skill will be played even if it's technically the 13th one. This applies to velvet choker too, as a side note.
