Game Pass Crossplay whit Steam and Epic on PC

Game Pass crossplay with PC would be up to Microsoft to do. They probably don't want their billion dollar console on the same network with PC hackers. I don't know of any console games that game online with PC.

Gamepass is using Xbox build so it's not really compatible with EGS/Steam.

There's a whole steam curator that sorts out crossplay games. It's named 'cross platform games' which is unimaginative but accurate.
People will get silly and even idiotically hostile about these things, but it's really just nice to be able to play games with friends who have other tech to play games on.
