I've one hit killed dudes with the knife it that helps

Head slash or from the back should one hit kill.
In other instances seems it takes 2-3 hits at least.

I think it depends on armor, and it definitely depends on the location of the stab. The back takes 1 to die and I have stabbed people 3 times in the side and they didn't die. In any case, the swing speed needs a serious buff.
