Every gun kills in maximum two hits to torso regardless of armor (heavy armor gives you one more bullet on something like 100+ meters), battle rifles may kill in one hit, depends on exact place.
Also, this is not CoD or Battlefield or CSGO. You can't simply run around, you have to move carefully, gain great map knowledge (very important) and PLAY THE OBJECTIVE.
In the end, you're a noob for now, deal with it. From my experience with games made by NWI, they require ~100 hours to "Get Good".
This game rewards advance and hold play style, you can't be rushing 24/7 like a mindless cod player.
That round can penetrate plate armor up to a certain rating IRL but this game doesnt work off of realism but hardcore so plate armor won't behave as such.
The temporal wound cavity of a 7.62x51/.308 is going to pulverize the internal organs and veins, center mass shots with the caliber has a very high chance for a immediate kill.
Why do you keep mixing up Mk 14 and AR-15? Those are two completely different weapons. Mk 14 is 7.62x51 (.308) battle rifle and AR-15 is 5.56x45 (.223) assault rifle.
G3, FAL, those are available to rifleman and one-shot without issue, and both can equip scopes
Basically, anyone can run a one-shot gun if they want to, and armor doesn't really stop that
MK-14 uses the same round...
Mosin uses similar size round.
I think the game is very balanced.
Weapons with more damage kicks a lot more, usually weight more and so on...
The 50 cal in the game is like real life too. EXTREMELY powerfull. Totally overkill... Buuuut...
The sway without a bipod is big... A litle sprint and it´s like using drugs, lol.
The weight, the cost, the reload time, the kick after shot just makes you lost your target and so on.
The devs REALLY put some effort to make all things balanced, and in my opinion, is working so far.
A BOLT ACTION 50 cal would be incredible costing like 1 or 2 points less.

The pistol M9 in the game, or some weapons like the MP-7, MP5 have similar power.

The M16, M4 and many others...
5.56x45 ~ 1700 joules
The AKM and similars
7.62x39 ~ 2100 joules
The MK14, M24 and others.
7.62x51 ~ 3500 joules
That´s almost 9 times more power than a 9 mm.
Mosin Nagant has a bit more than that (about 3,7K)
The .50 calibers are overpower here.
They deliver as high as 20K.
You REALLY dont need much more than 250 joules and good shoot placement to kill someone without armor.
The thing about rifle power is range and penetration power.
Typical body armor cant resist rifle rounds or when they resist, it´s up to AKM round or sometimes an MK14 round, but not an Armor piercing round (like M24).
