Recoil is also not bad at all, and they just recently buffed it with a patch.
I have not once seen a galil rifle in this game, either I have some kind of insanity going on or everyone else is playing on some secret test server I know nothing about.

Nah, both of them are in 5.56x45mm in 35-round magazines due to the distinctive curved shape (Galils in 7.62x51mm NATO have straight magazines like M14). Also, the insurgents' Galil is the ARM (Automatic Rifle Machine-gun) variant which is basically Galil AR with attached bipod.
It kind of should be though.

Gunner could use something that's lighter, IAR-style.

Tbh they should rework what guns go to each class.
The RoF is similar to AKM which is good for ammo conversation & its muzzle velocity is more than 900 m/s, which is pretty great to nail targets more easier without leading them as often as the others. The horizontal recoil is a bit higher than AKM, but still relatively controllable after the latest patch which signigicantly reduced its recoil.
