Limit your means of ending matches.
Lower discretion to force the wrestlers to take breathers later and later.
Adjust ukemi settings.
Use a ref with a slower movement speed and pinfall count.
For what it's worth, I'm not sure what the ref settings are, but I've noticed that the official NJPW edits in the PS4 version can put on 20-30 minute matches on the regular.
Lower ukemi in low DMG, higher in middle and large. Low doesn't give much of an opportunity to build up the spirit/comeback meter since most of the moves do low damage, medium has a better chance of it but is actually a rather short portion of the match, and large is where all the big moves happen.
Ukemi results in LESS reversals, since whenever the AI uses ukemi it means they're taking a move with the promise of a late-match recovery. Since a wrestler's spirit late in the match is low, they're less focused and more likely to have a move hit them either way. Ukemi boosts that spirit up and also gives them a damage boost.
For what it's worth, I'm curious as to whether Spike Chunsoft might have adjusted something -- I'm seeing a lot more matches that go to epic lengths in the PS4 version, but most of their official NJPW edits have 25/25/25 ukemi. It seems to happen even when I'm using a speedy ref...
It automatically activates when you hit 0% HP, or when you're in critical health and kick out at 2.9. To build up the meter, I think you hold down L1/LB while grappling and losing a grapple.
