In short, No, you can't choose your ring in Fire Promoter.
But, if you use a mod pack that's available, you can do much more than just pick a ring.
If you want to be able to choose your ring (and referee + loads more), investigate Carlzilla's mod pack which contain a set for Fire Promoter. It even has a history mod that keeps your wrestler's wins/losses. The author even wrote documentation so, if you're interested,

Without mods, you can't choose your ring because when you get sponsors, their ads will appear on your ring. If you use the mod pack, make sure to use a ring with a custom mat graphic (even if it's transparent) and apron graphics or else your sponsor's logo will appear here instead.
Most good players don't play without these mods. It is easy to set up. Copy the files from the patcher and the mod pack to your install directory, run the patcher, check what mods you want to put in and click "patch." It's that simple, run your game and you will see the mod windows upen and you can play around with the mods. It's easy.
There is so much this pack adds to the game from Arena textures to theme song usage to weight detection. Just about everything you are looking for is there.

Why give up? It’s extremely easy to set up the mods. There are step by step guides. And it’s free.
(I am not anti-mod or anything but there are heaps of mod issues for this game mostly 9 times out of 10 every issue with this game has come back with mods).
For other games it's fine.
Granted, it's your choice to play without them; just don't expect Spike to suddenly add those features for you in the base game.
