How do you grapple?
I have figured how to do different moves once in the grapple, but I haven't been able to figure out how to actually start grappling my opponent. How do you start the grappling? Also how do you switch to a back grapple? I am using an Xbox 360 controller.

If you are trying to do grapple moves, just walk into the person, then input that specific move right when your hands touch their shoulders. It's a specific timing thing that's different from any other wrestling series I've played.

Do mission mode to learn timing. Then its lots of practice to improve your timing and increase consistency of your speed.

Signatures and finishers are S and F in the movelists. If either of those are circle grapples you will likely have to wear your opponent down before you can hit them. Keep in mind its more like japanese wrestling so neither are guaranteed match enders in the slightest.

Uh to start a grapple, just walk into the opponent, to back grapple, either circle a dazed foe, and walk into them from behind, or use the back switch move if the character has it.

The game is timing based which is completely different from otger wrestling games. The grapple is automatically initiated both characters walk into each other. First person to execute the move at the CORRECT TIME and of valid strength level will win. Do mission mode for a tutorial on the timing. Its when both characters lock up and hands are on each others shoulders. This game is not a button masher for grappling and it will work against you.

I know how to time your grapples and beat your opponent. Anyways I was asking about the combination moves like "medium + small" attacks. But when I press both of the medium and small attack, it just does one of the attacks. I managed to do it on a controller but is it possible to do it on a keyboard? Because playing with a controller feels weird and I can't time my grapples with it.

As a keyboard warrior I can say it's definitely possible, redefine your keys if necessary.

My keyboard layout (I have an old keyboard without windows-key):

movement = arrow keys
small = left shift
medium = left control
big = \
run = left alt
pin = numpad 0
breathe = s
3D walking = d

I have to play with a controller I guess. But how do you do the "Big + Left and Right" Combos? You can't press left and right at the same time.

It's: big + left OR right

Please don't get frustrated. It took me 5 years to get the grappling down in Fire Pro Returns. It was so hard for me I almost gave up. But I finally got good at it. It comes naturally now.

Guaranteed grapple by simply walking into your opponent, instead of a telegraphed grapple button that can result in a whiff, counter or easy reversal.

Yeah, it's unfair alright.
