Open this file with notepad or NPP and on Line 7 where it says"mPreferredOnlineIntegrationMode" write in Undefined as per example below ↓
mPreferredOnlineIntegrationMode=Undefined
Save the file and that should not allow Epic Games Client to login - this is a crossover-play feature and will turn on if crossplay (Steam and Epic) is allowed.

Winter isn't fully wrong, look for this line in "GameUserSettings.ini":
mPreferredOnlineIntegrationMode=CrossPlay
It's the crossplay bit which triggers the game to try and log you in, remove this whole line and you're in the clear.

I removed my other response out of courtesy for Winter removing theirs. I still want to mention that I actually tried my suggestion for myself; I always do before I suggest something. Because if there's one thing I learned about the Net... it's that people copycat, even if they have no idea what they're talking about.
