Is there a way to dodge or counter attacks?

Are you using keyboard ?

If you're on gamepad, press RT (by default, although I'd recommend remapping dodge to a button instead of a trigger). If you're on keyboard+mouse, double-tap a direction.

There is evading and there is parrying.

Parrying is pointless. Evading is VITAL.

Practice as much as you want in the prologue, that way you won´t be massacred by Engels later.
