Enemies are on-level. If YOU are overleveled to 56 and still running around with lvl 49 then at first it will be really painful cause now you get a huge damage-penalty.
You just need 1-2 decent on-level weapons and it will be fine again.
Instead of "farming" for money (which likely will not help at all) - go back to TVHM sanctuary and open golden chest for a decent weapon. Just one is enough.

If you started UVHM at a level higher than 50 your gear is too weak. Is your gear at a lower level than enemies.?
Still, for different reasons, I don't like UVHM either; This is because I am someone who really enjoys using non-elemental weapons and not having passive abilities that deal elemental damage so, unfortunately, UVHM makes my style totally useless (and at the same time making it very difficult) but Using the style that the game intends makes it seem very easy to me, so I feel that there is no balance in said difficulty and it is a shame with how good it felt to play the TVHM missions in harmony with the level of my character.
I also struggled quite a lot going into UVHM for the first time and although I went through the trouble of acquiring an Unkempt Harold (which will soon be useless, but I'm stubborn and I'm having a blast blowing sh*t up with it) up to my level, I still die often.
I think the problem with NG+ in BL2 is that the whole game isn't balanced for the first few hours of it. I remember struggling in TVHM as well, getting there over the level it's supposed to start with weapons that were much weaker than me.
We have this ocean of content in the main game and DLCs, but we're not really supposed to engage with side content until UVHM if we intend to play it, as side content will get us over the level those difficult runs are supposed to start with weapons that cap at the previous difficulty level. If only the game capped our level until we start a new run in a higher difficulty, then this wouldn't be much of a problem.
If you don't wanna put up with UVHM's bs, then I suggest just going back to TVHM. There's no shame in that. UVHM isn't for everyone and it took me a year or so of playing on and off to get used to it. But if you do decide to continue, here are some valuable hints on gear:
1. As mentioned, go back to Sanctuary in TVHM and grab yourself some weapons from the gold chest. If you're ever struggling before reaching Sanctuary in UVHM, just go back to TVHM and grab some weapons from the chest. This will be quite helpful until you get used to using what comes your way in UVHM.
2. Get a slag magic missile from Dragon Keep in TVHM. This will last you all of UVHM as you'll be using it exclusively to slag enemies, so there's no need to worry about keeping your grenade slot up to your level. Hands down one of the best things you can get for your UVHM run.
3. Always try and have a shield that's up to your level. I prefer to focus on turtle shields as they were so good in TVHM and I'm not finding them to be bad in UVHM either. I'm still using a Lv. 63 turtle shield at 65 as it's still better than other level-appropriate turtle shields I'm coming across.
4. Once you're confident with your ability in killing enemies at a reasonable speed (and not dying as much as before), head to Dragon Keep in UVHM and get yourself a Grog Nozzle. You can't carry his weapon between difficulty levels, so you do have to get it in UVHM to use it there.
5. Finally, make sure to use anything that comes your way that fits your build and has higher damage than what you're already using. If you're struggling to find good gear, go back to Sanctuary and, you guessed it, roll the gold chest.
6. Bonus: if you can be bothered (though I recommend you don't), you can farm Torgue Tokens at the Bar Brawl quest in TVHM, then head back to UVHM and try your lack at the nearest machine for an Unkempt Harold. I had a Lv. 63 Hard UH until level 65, when I went through the trouble of farming it again to match and although I don't recommend the process, I can't say it wasn't worth it. This weapon slaps and I wish I could get it more easily to go through UVHM with it alone.
I'm still going through the game in UVHM, but I found these tips help a lot. Hopefully they'll help you too if you do decide to carry on.
People like this just want to have their feelings validated.
If you don't like UVHM stick to TVHM or learn how to mod it and use a mod that rebalances the bullet spongey enemies to be more interesting.
For me anyway. I pretty much just stay in TVHM and mods let me play with any weapons I want.
i already made skins and heads easier to get
i made level difference not increasing or reducing damage, i changed kill xp into 100% in the +1 -1 level range, otherwise is double xp for killing +2 higher levels, and 0xp for killing -2 lower
i made every damage either deal 100% damage or 150% damage, monsters immune to an element still get resists
i upped the eridium reward from quests, upped chance to drop eridium, made seraph bosses give 100 seraph crystals as quest reward
i moved around the skills in the skill trees...
and i tell you: uvhm modifiers can be changed at will, and made them like you prefer.

But despite build variety shrinking lots of weapons are still viable just at a slightly slower pace.
things like build synergy
accuracy so amount of crits you hit
amount of players.
using the most favourable damage type
stuns/crow control
which toon you are playing
all those are going to up damage without any slag.
and slag is not just slag guns you could also use skills,grenades,barrels...
i just modded the chest to cost 20 eridium per usage: with 10 eridium you can inject a mutated loot sack in the head hunter dlc 5 and get 1 guaranteed purple sometimes 2
so with 20 eridium you get 2 guaranteed purples ! (i converted also the goldenkey chest in the presequel, and heard you can do the same in borderlands 3)
