Honestly though, Ultimate Vault Hunter Mode is where the real challenge begins... So if you struggle with Normal Mode, you probably wouldn't manage True Vault Hunter Mode, let alone UVHM. Furtheremore, the "hundreds of people" always complain about the most ridiculous things with regards to difficulty. There are people people who complain that a character is bad, because they suck with that character. There are people who complain that enemies are too strong, while still using the same guns from 5 levels ago. The most ridiculous of all has to be the people who complain overpower levels are too hard, because overpower levels are an option that was literally made so that players could choose their difficulty, hence you are not forced to use it.
As mentioned above the UCP (The patch) makes things "easier", but it still keeps the core gameplay of the game. Enemies will have the same HP, spawnrate, etc. It just buffs some things that are mediocre/bad in higher difficulties so don't expect it to make the game a lot easier.
As for general gameplay, just try to keep your gear on-level, that really makes a lot of difference.
If you came here for a Borderlands 1 experience, then this isn't the game for you. Borderlands 2 isn't a nostalgia trip, it is an improvement on the poor level scaling, slow combat, bad UI and horrible method of storytelling, that was seen in Borderlands 1.
While it is an FPS with RPG elements, you literally do not have to grind to beat this game on Normal Mode or TVHM. UVHM is the only mode that involves any sort of grinding. This is because it wasn't even intended to be part of the game in the first place, players complained TVHM was too easy and so UVHM was made, and then OP levels were made for an even bigger challenge. Anyway, keeping your gear up to date is key as uNorthodoX mentioned; there are vending machines, chests scattered everywhere, boss fights every few levels, side missions. Gear doesn't have to be on level, but using old gear is the only reason you'd struggle in Normal Mode.
or just use cheat engine
Load it up,
open your character, (Click open, then into the folder, then Sort by date, your current save is the most recent - Double click it.)
goto backpack tab,
click sync all,
Click save.
That's it.
Just remember to Select Character > then your character, if you do this while alt+tabbing from BL2 main menu, to ensure you're loading the character again. Then select playthrough if asked, and Continue.
Otherwise just load the game as usual and away you go. Do this every few levels to keep your weapons and items at your level. No need to change anything else.
Using UCP or Reborn (which I use) is a bit more complicated.

Damage stats on a gun isn't anything. For example.
2 sniper rifles. 1 at lvl 20 lets say 260 damage and 2nd one with lvl 25 but with 240 damage. While this comparison is a bit weak here is a thing. Boss will resist damage from guns that are underleveled. Saying this boss at lvl 25 will not receive more damage from lvl20 gun than from lvl25 gun even if the potentialy "stronger" and lower level gun should more damage.
Just keep eye on every darn thing ( chest, opponents, loot machines ) try your luck. 1st playthrough can be played pretty much with green gun no problem, all those gun/skill synergies really matter ONLY on 3rd playthrough. In 1st playthrough you can try luck with slag mechanics if it is that hard ( slagged enemies receives more damage ) altough slaging requires a bit more skill and equipment, if you manage, it might become very usefull mechanic to use.
Other than that.
You can try playing gunzerker which is considered as broken character by some because of of how strong he can be.
