Using the all trains available from the start just changes the start date to 1850 or whatever - overwriting what is in the file so you would lose the actual start date .

There is no such list in-game. If you are using mods you need to check their description or files.
Edit: dammit Autocoach!!! Why are you always faster by 30 seconds?! ^^

Your idea really is the best answer to this question as it would included mods as well as vanilla vehicles. It would take a bit more effort to document all of it, but it would work for sure. I guess I could use a spreadsheet and then if I add more mods I could just update it as I go.
