I agree, I can't see the point in 'easy' mode with assisted braking & steering. So I'm playing on intermediate, and even turned one of those options off.
I had problems keepiing a 4wd drive car from flipping the rear-end out. Then I messed about with the advanced wheel settings. I think the one that helped most was setting deadzone to 0. (Think I also put Saturation to 100 which most google'd advice seemed to also suggest).
And, I know this sounds silly, but you don't have to turn the wheel full-lock !! On F1 games I think I got used to full-lock turns but you really can't do that in this game !!
I generally don't bother with the drifting components of games like these, specifically Need For Speed: Shift, but in Dirt3 I've managed to get Bronze on the first two drift challenges which I'm happy enough about.
I think it really is a trial and error thing of finding a car set-up which allows you to get the rear end out and keep it there. I've certainly not cracked that yet as I usually do a half-donut !! I also still can't decide if the way the get the rear end out is by handbrake or the 'Skandinavian Flick' - steer away from the corner and then 'Flick' the car the other way.
Practise, practise, practise.
No need to steer at max to drift, all is in speed and acceleration.
Just start with handbrake at low speed, or just steering when fast to put you through the turn, then downgear and full gaz for drifting all along (don't touch the steering wheel).
You can't make it if your speed is too fast at the beginning, try to brake before being in the turn, accelerate inside a turn is always easier/safer than brake inside a turn.
Counter steer to avoid spinning, but over 50% is in managing acceleration.
And, you can't play with any assists, and without sequencial gears, you are playing Dirt, not Mario Kart ;)
Another tip that is true to trust:
Playing with a keyboard is harder because you cannot do small controll adjustmens. If you can't play with a controller, learn to tap the accelerator and play some practise rounds to find the sweet spot for the ultimate drift.
Keep in mind that you most likely have to adjust you speed for the right angle and the car.

There really isn't a need to to steer when you hit a good grove around a turn. You just need to hold at half throttle so the engine is at a stable RPM and it will carry you sideways through the turn.
