As for maneuverability, well, the Osprey sits in the trash league. Everything else is fair game, you fly them for immersion or looks.
Go on the wharf, fit them with max stuff and look at the values, you should be able to determine what you want to fly yourself. If you end up not liking it, you can always pick another.
Either way, if you don't have much of a choice, just pick something and make it work.
There are the two "supercharged" Gunships, the Dragon and the Nemesis, both too fast so difficult to stop falling on mines, asteroids etc. The Dragon has more firepower but only one shield!!!
Ships like the minotaur on the other hand are designed to have no blind spots in their firing arcs, and are generally more maneuverable as well.
