Do you want harder enemies?
Do you want lots more settlers and places to build?
Do you want weapons and armor?
Do you want more dialog options or different quests?
Do you just want to have a more pretty environment? Bug fixes for things (you'd want to look at whether those bugs are in the game, or outside of the game's scope such as video card conflicts etc).

I also wouldn't bother to play the game without immersive HUD. Hideous HUD this game has, so beautiful without it.
Also, if you really respect yourself you should get an ENB with nice saturated colors and get tasteful green grass mods like a touch of green.
