it'll get scrapped as needed.
occasionally I pull some things out and drop them on the ground to scrap them, large heavy things I pick up that weigh 3 lbs but I just need the oil which weighs much less.
but thats mainly to take to a different settlement.
it can stay unscrapped inside the workbench forever.
Armor and weapons are NEVER broken down automatically, for obvious reasons. You can either drop and scrap as you're doing OR you can scrap them at a corresponding Armor or Weapon workbench. Other options include storing them until later or selling them to a merchant. If you decide to store them, don't put them in the WS. Build a container and store them in that - settlers won't steal them that way.
Or you could just assign a provisioner. I just build a robot at Greygarden and assign it to Nuka World Red Rocket.
