Peace between minutemen and the Brotherhood?
I'm going for a minuteman ending this run and I don't really want to be enemies with the BoS. Do I have to do their questline to maintain peace up to a certain point? Its kind of a pain in the ass.

Even without following the above guide, you won't make enemies of BoS if you go with a MM ending (or vice versa), they will merely be disappointed if you didn't "side" with them. The common enemy is the Institute. Side with the Institute and you WILL make enemies of BoS (not sure about the MM though - perhaps someone else can confirm as I haven't done an Institute ending).

I did minutemen until i reached institute but blew up the institute, causing all 3 factions to become my enemy.

The BoS and Railroad will only become your enemy if you do something to become their enemy, like killing one of them. You can complete the MM questline without being enemies with them.

If you do become enemies with the BoS after completing the main questline, you will get the mission to destroy the BoS.

What if I accidentally shoot one of their soldiers while in a heated firefight (like if one of them RUNS IN FRONT OF ME WHILE I'M FIRING DAMMIT!!!)? It can happen, especially with the mods I use. Does that immediately make the entire chapter turn hostile?

The first time I did the Bunker Hill battle, I was working for the Institute and killed plenty of BoS
(because I didn't know any better and thought I had to :steamhappy:). This did not cause the BoS to become hostile to me.

If the quest you are following happens to target the BOS then shooting them wont make the rest of them hostile (such as some Nuka World Raider quests have you hitting a BOS patrol). If you happen to shoot one of them, by accident, it usually wont make them hostile, or even shoot back at you (depending on the amount of damage inflicted or death). I have shot lots of BOS by accident and only had a problem when my companion decided I had done it on purpose and went nuts. If you just approach a BOS member and shoot them dead, well then, its game on.
edit: Also, certain companions have a real hate on for the BOS and will automatically attack them on sight. You will not become hostile to the BOS if you come under fire from them if this happens.

Probably a bit less lenient in my game (better locational damage = everything except deathclaws are more squishy).
