So the two extra pawns don't level up?
I'm having a difficult time understanding this game - is it the case that the two extra pawns don't level up. That I have to keep getting new pawns as I move up?

Yeah they get experience but they don't change. You can, however, favourite them and summon them again to see if their master has leveled them up while you had them :)

When you summon a Pawn you get a temporary carbon copy of it. It won't change with you but it will in its own world.

Seems kind of odd, considering how quickly you level?

I still haven't figure out how to fast travel. That's going to have to become a priority for me, if I'm to advance in this game.

Too much running around here.
Also, how do I restore the health of my pawns? They lose health after just a few fights. Surely I don't have to find an inn to rest at after every second fight?

That would mean I'd be visiting an inn every ten minutes?

If you give them herbs or the like they will heal themselves when they have the need.
They don't level with you so that you have to keep exchanging them and try new ones :)

Fast travel works via an item called Ferrystone (one use) or Eternal Ferrystone (unlimited use). They will take you to Port Crystals, of which there are 3 permanent ones. Gran Soren, Cassardis and Bitterblack Isle. Throughout the game you get 5 of these you can place anywhere you want (and pick up to replace if you wish).

Healing beyond the grey health can be done with a few items that heal the entire party. Early on, Balmy items are easiest to get. You make them by combining Large Nuts (dropped a lot from Bats) with Harspud items (sause, juice, etc). The other method is to Rest.

This really seems like a lot of work. I have to spoon feed all three pawns?

This is what I can't figure out. Can I rest anywhere? How?
If they would level up, you would never change them. That woukd invalidate the whole pawn system.

It's very clever. You have to rent new ones, once in a while.

You can Rest at Inns, in towns. And a select few outside locations (look for Guardsmen with large backpacks, they will let you Rest).

You level fast early on, then it slows down later in the game. Also once you're past level 20-25ish it won't matter as much if your rented pawns are 5-10 levels below you as long as they have the proper Skills and Inclinations for the job you want them to perform.

Once you get to Gran Soren, visit the Inn and get the Eternal Ferrystone from your stash. By default that allows you to fast travel between Cassardis and Gran Soren (and Bitterblack Isle if you've unlocked that). In your travels you'll come across Portcrystals (they're blueish glowing spires, the first you're likely to encounter is at the bottom of Everfall) that can be picked up and placed for additional fast travel locations.

A lot of herbs can be turned into healing potions (or eaten raw for a lesser effect). Pawns will use them if they're getting really low on health, but they will usually not do it if they're still in the green part of the health bar.

No, you just give them items to use. Like any other party based RPG, your party members are unable to use items that are not in their inventory.
A good early game healing item is spring water. In the game there are 3 "Healing Spring" locations one of which is north of gran soren accross the bridge in the woods up there. Once in a healing spring empty bottles can be filled with spring water which has a 300hp party heal per bottle. Since bottles cost 22g or such its fairly cheap to buy and then fill them up for the party. Stash the extras in the bank and give them to your pawns. When one pawn heals the whole party heals.
What you need is to understand 2 things:

1) Pawns wont die directly during the start atleast , so even if they fall , one click and they are back up quite fast.

2) You can hire a mage pawn that knows how to real , assuming your main pawn doesnt.

These two things together have been enough for me even without any items atleast up to the point im in , level 30. From what i understood , with more levels the items will be a better option.

OBS: The honestly tricky part is understanding which are the good and which are the bad pawns , just like how to make yours one of the good ones. For that you better check a guide like i did.

That's what I did (this time) and my Ranger pawn became a nexus/medicant :D Actually worked really well too...has since morphed back to scather/nexus/medicant.
Reading your post, it's not clear to me if you even have a healer to heal the grey damage. So if you don't have a healer, get one. Hire a mage pawn with the Anodyne spell and the Medicant inclination. They will keep your pawns (and you) healed.
