Now on to the only thing I have commented on until this post. YOU asked if the fight was beatable. It is. The problem is pretty darn clear when you can't move a second time, when Ixion gets 5 moves to your one, etc. Your stats are too low. How do we raise stats? GRIND. It's the only real solution to the problem you asked about. Yes, you can play as you like. But we have proposed the most viable solution to the problem you asked about. Do it, don't do it, I don't much care. BUT don't give us flak over a valid answer.

I also use e.g. the Magic Sphere in Luca on Yuna, the Strength Sphere I get from the Blitzball tournament on Tidus, the ones from lightning dodging I tend to spread between my main 2 physical attackers (or Yuna if I want to break the game with aeon physicals).
First Belgemine fight -> Blizzard vs Ifrit on Attack turns, Shield on Meteor Strike turns. Energy Blast when Valefor is in yellow HP. Done.
Second fight -> Summon Ifrit, attack on attack turns, Shield on Aerospark turns. Heal when you can. When Ifrit is in low HP or if Ixion casts Haste, use Hellfire. Did Ixion die?
If not, summon Valefor. Cast Water. Probably you're now in critical HP with full Overdrive. Use Energy Blast. Did Ixion die? Should have. If not, you're underleveled to the point strategy won't help.
Remium Temple is a side quest so it's not really neccessary for the story to beat Bahamut. On the other hand, you can easily beat him/it with (a customized) Anima or the correct Yojimbo inputs. Anima with two Overdrives. If you went to Remium, you're probably one of those players who does everything anyways. (Just like little old me.) So you should be equipped rather well by now or when you return to the temple.
The semi-mandatory battles for semi-mandatory items (for customizing/evolving Aeons) should end with Shiva. And that's all there is to that.
